Sesame and Ginger Chicken

Oh, hi there friends.

Yes, I’ve been missing the past few days, but I’ve had nothing exciting to report.

Some updates on my healthy living attempt at healthy living this week:

  • Food has been really good.  I’ve been cooking myself some eggs for breakfast, having a healthy lunch (homemade salad) and snacks, and we’ve been cooking dinner.
  • Exercise has been lacking.  I had a really rough week at work, and have only run once this week.  My running buddy has also been sick, so it has been easier to skip my runs.  (whoops)
  • Smoking has not been good.  Seriously having a hard time with this.
  • Water intake has also not been good.  I have always been terrible at drinking water (I just don’t think about drinking anything during the day for some reason, especially when I’m busy).  I really need to work on it though, because I am definitely dehydrated and have been getting headaches later in the day.
  • My second race is tomorrow!  Excited, but nervous. :)
Oh, I also tried out a new recipe for dinner last night.

Sesame and Ginger Chicken

  • 1 lb. skinless, boneless chicken breast, cut into bite-sized strips
  • 1/4 cup bottled light Asian-style dressing with sesame and ginger
  • 2 cups packaged julienned carrots (I had to call the husband for this and ask him what julienne meant lol)
  • 1/8 tsp. crushed red pepper
  • 1 head lettuce, leaves separated
  • 1/4 cup honey-roasted peanuts
  • chopped lime wedges
Sprinkle chicken lightly with salt and pepper.  Lightly coat a large skillet with cooking spray; heat over medium heat.
Add chicken; cook and stir for 3 minutes or until browned.
Add 1 tablespoon of the dressing and the carrots to skillet; cook and stir for 2 to 3 minutes more or until carrots are crisp-tender and chicken is no longer pink.
Stir in red pepper.
On a large platter arrange 4 stacks of lettuce leaves.
Serve by filling leaves with chicken mixture.  Sprinkle with nuts.  Serve with the remaining dressing and lime wedges.

A little messy, but I think the presentation is a lot better than last time.

This turned out very well, however it was a bit spicy for my taste.

The husband seemed to like it, though.

I am currently roasting some potatoes while the husband cooks up some steaks on the grill.

Yummmmmmmm.

Couch to 5K Week One – complete!  

Met Nikki at the track this evening.  Run went great.  The 60 seconds seemed to go faster and a bit easier.

I may do this week’s running workout one more time before the week is over.  We shall seeeeeeeeeeee.

Going to try to wake my ass up at 4:30 a.m. tomorrow morning and do a strength circuit at the gym.  Wish me luck!  :)

In other news, who is becoming increasingly terrified about this Hurricane Irene possibly hitting us?

Oh, that would be me.

Buying a case of bottled water tomorrow.

  • read/complete one chapter of Android App Development book
  • take puppies on a walk

day one – complete!

Just got back from my run with Nikki.

We decided on doing the very famous Couch to 5K plan to get back into it.

The first week is:

  • 5 minute warm-up walk
  • 60 seconds running
  • 90 seconds walking
  • Repeat for 20 minutes (8 times)

When I first read this, thinking back to when we were running 3, 4 and 5 miles at a time, I thought it was going to be too easy for us.

I was wronggggggggggggg.

It’s lovely what shitty eating, hardly any exercise and smoking like a friggin chimney will do to your body.

It was very hard.

And now I have a stomach ache and chest pains.

Maybe I’ll shoot for zero cigarettes tomorrow.

Welp….school is a no-go.

I went in yesterday evening to meet with the admissions counselor.  I got a lot more information about the program, and was happy with it (even though I wasn’t sure about the school environment).  However, I was also told that I was 16th on the waiting list.

I weighed the amount of things I would have to do in the next week to finish applying, and the chance of me actually getting in for the Fall.  I decided to wait it out until next year.

Plus, this will give me more time to make sure this is definitely what I want to do.

So for now, my focus is on the 30 Before 30.

I did some research on Saturday, and I think I’ve got my first 5 races picked out.  Woop Woop!

I’m meeting with Nikki tonight for our first run!  I’ll let you know how it goes.

Oh, and if you’re wondering, I kicked the crap out of that to-do list Saturday.  Hollerrrrrrrrrrrrr (please imagine that in the whitest girl voice ever)
