Sesame and Ginger Chicken

Oh, hi there friends.

Yes, I’ve been missing the past few days, but I’ve had nothing exciting to report.

Some updates on my healthy living attempt at healthy living this week:

  • Food has been really good.  I’ve been cooking myself some eggs for breakfast, having a healthy lunch (homemade salad) and snacks, and we’ve been cooking dinner.
  • Exercise has been lacking.  I had a really rough week at work, and have only run once this week.  My running buddy has also been sick, so it has been easier to skip my runs.  (whoops)
  • Smoking has not been good.  Seriously having a hard time with this.
  • Water intake has also not been good.  I have always been terrible at drinking water (I just don’t think about drinking anything during the day for some reason, especially when I’m busy).  I really need to work on it though, because I am definitely dehydrated and have been getting headaches later in the day.
  • My second race is tomorrow!  Excited, but nervous. :)
Oh, I also tried out a new recipe for dinner last night.

Sesame and Ginger Chicken

  • 1 lb. skinless, boneless chicken breast, cut into bite-sized strips
  • 1/4 cup bottled light Asian-style dressing with sesame and ginger
  • 2 cups packaged julienned carrots (I had to call the husband for this and ask him what julienne meant lol)
  • 1/8 tsp. crushed red pepper
  • 1 head lettuce, leaves separated
  • 1/4 cup honey-roasted peanuts
  • chopped lime wedges
Sprinkle chicken lightly with salt and pepper.  Lightly coat a large skillet with cooking spray; heat over medium heat.
Add chicken; cook and stir for 3 minutes or until browned.
Add 1 tablespoon of the dressing and the carrots to skillet; cook and stir for 2 to 3 minutes more or until carrots are crisp-tender and chicken is no longer pink.
Stir in red pepper.
On a large platter arrange 4 stacks of lettuce leaves.
Serve by filling leaves with chicken mixture.  Sprinkle with nuts.  Serve with the remaining dressing and lime wedges.

A little messy, but I think the presentation is a lot better than last time.

I’m working on it, folks.

This turned out very well, however it was a bit spicy for my taste.

The husband seemed to like it, though.

I am currently roasting some potatoes while the husband cooks up some steaks on the grill.

Yummmmmmmm.

Two Recipes

If you recall, I was in a super BM on Saturday.

Luckily, I woke up on Sunday morning refreshed and back to my happy self.

Does anyone remember these books??!! This picture made me a little nostalgic.

I also woke up wanting to cook breakfast for the husband, since he endured my raging unjustified temper the day before.

My first thought was an omelet, and then I happened to pick up a magazine and find a recipe for Cinnamon-Vanilla French Toast.

I’m not really into french toast myself, and had never cooked it before.  But I hear it’s super easy, and the husband is a big fan.

So I put on a pot of coffee, and I started to cook.

I was pretty nervous (cooking scares me because I don’t know what I’m doing), but it was way more simple than I thought.

And the husband seemed to enjoy it.

I really need to work on my presentation.  Maybe some sliced strawberries on the side next time?  Any suggestions?

Cinnamon Vanilla French Toast

  • 2/3 cup milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/8 teaspoon nutmeg
  • 4 slices hearty whole-grain bread
  • cooking spray
  • syrup
Combine milk, eggs, vanilla extract, cinnamon, and nutmeg in a small bowl; whisk until well blended.
 Pour mixture into a pie plate or shallow bowl. (the pie plate was genius and worked great)
Dip 2 bread slices into egg mixture and let stand for 30 seconds to absorb the liquid.  Flip bread over and let stand in mixture another 30 seconds.
Heat a nonstick skillet lightly coated with cooking spray (I used PAM)  over medium heat.  Add 2 dipped bread slices and cook for 2 minutes or until lightly browned. (It was hard to tell when they were browned because the bread is whole-grain)  Flip over and continue cooking for one minute or until done.  Repeat steps 3 and 4 with remaining bread slices.

On to recipe number two!

I took chicken out yesterday thinking that the husband would be cooking it up for dinner.

Instead, I got inspired and started looking up chicken recipes at work.

I don’t know what’s gotten into me lately.  I normally hate to cook, and let the husband do that while I do the baking.  But recently I’ve really been in the mood to try new recipes!

After printing out about 10 different dishes, I decided on Chicken Romano with Lemon Butter Sauce.

But there was a problem.

This recipe called for white wine.

I don’t keep wine in the house.

If you remember correctly, I am a beer girl.  I do not enjoy wine in the least.

I knew I had to make a trip to the grocery store for a few things I was missing, but to have to go to the liquor store, too?

I’m too lazy for that.

So I did what any normal grown woman would do.

I called my mom.

Me:  “Mom, I have a very important question for you.”

Mom:  “Ok, what?”

Me:  “If a recipe calls for white wine, can I just use beer instead?”  (***Please say yes, please say yes***)

Mom:  “Nooo!”

She suggested that I go to the liquor store buy a pack of small bottles instead of one big bottle.  That way I could use a little, and save the rest (without it going bad) for other recipes down the line.

That turned out to be a spectacular idea.  Thanks, mommy.  :)

And so did this chicken!

The husband’s actual words were, “This is fucking delicious!”

(Please ignore the things to the left of me - that is the we-just-bought-this-and-it-needs-to-come-upstairs-later pile.)

He also described it as “restaurant quality”.

I’ll have to admit – it was pretty fucking amazing.

I’m sorry I keep cursing, but I need to get across how spectacular this chicken was!

You need to go make it right away.

Go.

Seriously.

Chicken Romano with Lemon Butter Sauce

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup flour
  • 3 eggs
  • 3/4 cup romano cheese
  • 3/4 chicken stock
  • 1/2 stick butter
  • 1 whole lemon
  • 1/3 cup white wine (not beer)
  • 1/2 tablespoon dried parsly

Preheat oven to 350.  Add olive oil to skillet on medium heat.

Tenderize chicken, then dredge through flour, egg and cheese (in that order).  Place in skillet and brown on both sides.  Once brown, turn off heat.

Melt butter in a small sauce pan.  Add lemon juice and chopped up lemons.  Try to discard all seeds.  Add white wine and parsley.  Let come to a boil.  Then pour entire mix into chicken skillet.  Add chicken stock to skillet.

Cover and bake for about 20 minutes at 350.  Serve with pasta or rice.

Yummmmmmmmm.  :)

Aaaaaaaaaand to close out the post, some pictures of Jackson protecting the new ball we got him.

He didn’t go anywhere without it for a whole night.

He even fell asleep with it in his mouth.

Remember to Charge Your Running Electronics

I mayyyy have forgotten to charge these two essential things after my race on Saturday.

Perhaps due to my poor mood?

After work today, I drove to the track to run.

Unfortunately, there were some kids playing a soccer game.

I didn’t want to interrupt.

I was going to try another track, when I realized it would be much easier for me to just run around my neighborhood.

I was avoiding it because I was tired, and my neighborhood is literally called Rollingwood (lots of trees and hills).

I decided to suck it up and do that.  If I’m going to be running 30 races in the next 20 months, I will need to get good at hills.

Besides, I had my music to keep me energized, right?

Wrong.

Five minutes into my run, my ipod died.

About two minutes later, my Garmin died as well.

So now not only did I not have any music, I had no idea how fast or far I was running either.

I couldn’t time my intervals as per the Couch to 5K.

So I decided to just run as much as I could, walk when I got tired, and enjoy the trees.

(I <3 trees…literally…I’m obsessed)

I would love to give you my stats, but I have no idea what they are.

I just know that I was sweaty and felt great when I was done.

:)

Everything is currently charging and should be all set for my next run.

30 Before 30 – Race # 1 – Jana Piccola Walk 4 Love

As per the 30 Before 30, this morning I ran my first race of the series – the Jana Piccola Walk 4 Love.

My goal for this race was to run it in 38 minutes.

38:02 was the time of my original first-ever race (the same one, actually).

I wanted to at least match that.

I finished today’s run in 37:59 – just made it.

I really should be happy with that, but I’m not.

I am in such a BM today (bad mood).

I blame it on my impending monthly woman torture (upcoming period).

If I don’t try to laugh about it, I may kill someone.

(Sorry, husband)

Also, it’s ok for me to say it.  If anyone else says it, it is offensive and incorrect.

Kinda like the n-word.

(I finally get it now, [current politically correct word for black people])

(Sorry, anyone who now thinks I’m racist)

I digress…

I was in a very negative mindset this morning, which carried over to my run.

My legs were very tired, and I ended up walking a lot more than I wanted to.

It didn’t rain, which was nice (silver lining?)…

and there were plenty of race volunteers cheering along the way.

I kinda wanted to tell them to shut up because I was not doing a good job.

I also just thought about throwing something at a squirrel on a tree in my backyard, who is doing nothing more than moving his tail around in a very annoying-to-me way.

(Sorry, squirrel)

(Don’t worry non-PMSing animal lovers, I didn’t)

On the car ride home I tried to assess what I can do to make my next races better.

1.  Continue to not smoke (excluding the cigarettes I am smoking right now while writing this).

Yes, I made it (sweeping declaration) until now, which is an accomplishment.

Unlike sex after no sex for two weeks feels great, the cigarettes do not taste as good as expected.

This is probably a good thing.

2.  Eat better.  

I have been eating fine at work (I bring my breakfast, lunch, snacks), but when not at work I feel the need to eat crappier food.

Maybe a result of the not smoking.

Maybe just because I suck.

I also feel that I need more protein in my diet.

3.  Get back into strength training.

I love to strength train, but I suck at actually doing it.

I do not like going when the area is packed full of annoying judgmental (in my mind) boys, so I have to go before work.

It’s so hard to get up sometimes.

But my legs were clearly not strong enough during the race, and I definitely miss the feeling of  a strong body.

I’m going to try to focus on these things moving forward.

Will it go as planned?

We shall see my friends, we shall see.

Fun things I did/am doing today to lift my spirits.

1.  The husband and I re-watched Bridesmaids.  I never get tired of the hilariousness.

2.  Later on tonight, we are going to Hooters to watch UFC with some friends.

Boobs and fighting?

Yes, please.

The New FB sucks

Can anyone figure this out??

I hate it.

I want the old one back.

Haaaaaaaa.  Get it?

Although I’m sure by now Zuckerberg is just sitting pretty with his ca-gillions of dollars, while some idiot team of developers is coming up with “all these great ideas for updates”.

I know every time a new fb update comes out, everyone complains about it…so I apologize for saying things that you are most likely sick of hearing.

However this one is so bad, I have actually stopped using Facebook for now.

Although my urge to stalk is strong…

(love him, btw)

…every time I open fb I am punched in the face by this new format, and it hurts.

Waaaaaaaaaaaaaa.

On to more exciting things!

Two pieces of spectacular news.

1.  I have not smoked since Tuesday.  One more day to go and I will have held true to my “sweeping declaration“!  So proud.

2.  My first 5K is tomorrow!  Woo woo!  The Jana Piccola Walk 4 Love will kick off the 30 Before 30.  It is supposed to rain, though.  Cross your fingers for me!

Off to have dinner.
